  • 1/2 cup raw cacao powder
  • 1/3 cup oat flour
  • 1 tsp baking powder

Peanut Butter Filling:

  • 3/4 cup creamy peanut butter
  • 3 tbsp coconut oil
  • 3 tbsp pure maple syrup

Chocolate Ganache:

  • 1/4 cup dark chocolate chips
  • 6 tbsp creamy peanut butter

  1. Make the Brownies:
    • In a mixing bowl, combine the cooked and cooled sweet potato, almond butter, coconut oil, pure maple syrup, and pure vanilla extract. Mix until smooth.
    • Add in the coconut sugar, raw cacao powder, oat flour, and baking powder. Mix until well combined.
    • Pour the batter into an 8×8-inch pan lined with parchment paper.
    • Bake at 350°F (175°C) for 22-24 minutes, or until the brownies are set. Allow them to cool completely.
  2. Prepare the Peanut Butter Filling:
    • In a saucepan, warm the creamy peanut butter, coconut oil, and pure maple syrup until smooth and well combined.
    • Pour the peanut butter mixture over the cooled brownies, spreading it evenly.
    • Place the brownies in the freezer for 1 hour, or until the peanut butter layer is firm.
  3. Make the Chocolate Ganache:
    • In a microwave-safe bowl, melt the dark chocolate chips and creamy peanut butter together until smooth.
    • Pour the chocolate ganache over the chilled peanut butter layer, spreading it evenly.
    • Return the brownies to the fridge and freeze until the ganache layer is firm, about 15 minutes.
  4. Shape and Decorate:
    • Once the brownies are firm, use a knife or football-shaped cookie cutter to cut them into football shapes.
    • Don’t discard any extra pieces; enjoy them as a tasty snack!
    • Decorate the football-shaped brownies with white icing piped through a bag with a tiny hole cut in the corner to create a football design.
