  • Handful of red bell pepper slivers
  • 1/2 mandarin, peeled and separated
  • 1/2 blood orange, sliced
  • Spoonful of chopped green onion
  • Handful of shredded carrots
  • Sprinkle of chopped cilantro
  • Handful of honey sesame cashews, chopped
  • Handful of crispy wonton strips
  • Salt and pepper to taste

For the Blood Orange Honey Ginger Dressing:

  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • Juice of one blood orange
  • 1/2 teaspoon ginger, grated
  • 2 tablespoons rice wine vinegar
  • 1.5 tablespoons Dijon mustard
  • 2 tablespoons honey (preferably hot honey)
  • Spoonful of chopped chives
  • Salt and pepper to taste

1. Prepare the Steak:

  • Pat dry the rib eye steak and coat each side generously with olive oil, kosher salt, and black pepper.
  • Heat a little oil in a cast iron pan over medium-high heat.
  • Once the pan is hot, add the steak and let it cook undisturbed for about 3 minutes on each side for medium-rare doneness.
  • During the last minute of cooking, add a tablespoon of butter to the pan and continuously baste the steak.
  • Use a meat thermometer to check the steak’s temperature; it should read between 125-130 degrees Fahrenheit for medium-rare.
  • Remove the steak from heat and let it rest for 5-10 minutes before slicing.

2. Prepare the Salad:

  • In a large bowl, combine the chopped romaine lettuce, cabbage mix, cucumber, red bell pepper slivers, mandarin segments, blood orange slices, green onion, shredded carrots, chopped cilantro, honey sesame cashews, and crispy wonton strips.
  • Season with salt and pepper to taste.

3. Prepare the Dressing:

  • In a small bowl, whisk together the olive oil, minced garlic, blood orange juice, grated ginger, rice wine vinegar, Dijon mustard, honey, chopped chives, salt, and pepper until well combined.

4. Assemble the Salad:

  • Slice the rested rib eye steak thinly.
  • Add the sliced steak to the prepared salad.
  • Drizzle the blood orange honey ginger dressing over the salad and toss gently to coat evenly.

5. Serve:

  • Divide the salad between plates and serve immediately.
