  • 3 sheets nori paper
  • 1½ cups cooked sushi rice (or basmati) Salmon:
  • 1 lb salmon, skin removed + cubed small
  • 2 tbsp sesame oil (or olive oil)
  • 1 tbsp low sodium soy sauce
  • 1 tbsp honey
  • 2 scallions, diced
  • ½ tsp each garlic powder, onion powder, chili powder, paprika, dried oregano
  • Salt to taste Spicy Mayo:
  • ¼ cup Kewpie mayo
  • 2 tsp Sriracha sauce
  • 1 tsp honey Toppings:
  • ½ avocado, diced small
  • 2 tsp black sesame seeds


  1. Preheat your oven to 400°F (200°C). Using scissors, cut the nori sheets into four equal squares.
  2. In a bowl, toss the cubed salmon with sesame oil, soy sauce, honey, diced scallions, garlic powder, onion powder, chili powder, paprika, dried oregano, and salt. Allow it to marinate for up to 4 hours.
  3. Place a heaping tablespoon of cooked rice onto each nori square and spread it out slightly. Transfer each nori square to a muffin slot, gently pressing down to center the rice in the middle with the edges coming up along the sides of the slot.
  4. Fill each muffin slot with 4-5 marinated salmon cubes. Transfer the muffin pan to the preheated oven and bake for 15-17 minutes. If desired, broil for an additional 1-2 minutes at the end to achieve a golden tan on the salmon.
  5. Remove the muffins from the oven and allow them to cool slightly. Top each muffin with diced avocado, black sesame seeds, and a drizzle of spicy mayo.
