For the brownies:

  • 1 medium sweet potato, cooked and cooled
  • 1/2 cup Almond Butter
  • 1/2 cup Coconut Sugar
  • 2 Tbsp Coconut Oil
  • 2 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/2 cup Cocoa Powder
  • 1/3 cup Oat Flour
  • 1 tsp Baking Powder

For the chocolate ganache:

  • 1 cup Dark Chocolate Chips
  • 1/2 cup Coconut Cream

  1. In a large mixing bowl, combine the cooked and cooled sweet potato, almond butter, coconut sugar, coconut oil, pure maple syrup, and pure vanilla extract. Mix until well combined.
  2. Gradually fold in the cocoa powder, oat flour, and baking powder until a smooth batter forms.
  3. Pour the batter into an 8×8 pan lined with parchment paper, spreading it out evenly.
  4. Bake the brownies in a preheated oven at 350°F (175°C) for 22-24 minutes, or until a toothpick inserted into the center comes out clean.
  5. Once baked, remove the brownies from the oven and let them cool completely in the pan.
  6. While the brownies are cooling, prepare the chocolate ganache. In a saucepan over low to medium heat, combine the dark chocolate chips and coconut cream. Stir continuously until the mixture is smooth and creamy.
  7. Pour the chocolate ganache over the cooled brownies, spreading it out evenly with a spatula.
  8. Optionally, sprinkle dye-free chocolate gems over the ganache for added decoration.
  9. Place the brownies in the fridge to set for a couple of hours, or in the freezer for about an hour.
  10. Once set, slice the brownies into squares and enjoy!
  11. Store any leftovers in the fridge for future indulgence.
