Ingredients

  • 3 to 4 pounds pork shoulder or pork butt, excess fat trimmed

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 cup ketchup

  • 1/4 cup apple cider vinegar

  • 1/4 cup chicken broth

  • 1/4 cup brown sugar

  • 2 tablespoons Dijon mustard

  • 1 tablespoon Worcestershire sauce

  • 2 teaspoons smoked paprika

  • 1 teaspoon garlic powder

  • Hamburger buns or sandwich rolls, for serving

  • Coleslaw, for serving (recipe below)

Directions

  • Season the pork shoulder with salt and pepper. Place it in a slow cooker.
  • In a medium bowl, whisk together ketchup, apple cider vinegar, chicken broth, brown sugar, Dijon mustard, Worcestershire sauce, smoked paprika, and garlic powder until smooth.
  • Pour the barbecue sauce over the pork, ensuring it’s evenly coated. Cover and cook on LOW for 8–10 hours (preferred) or HIGH for 4–6 hours, until the pork is tender and easily shredded.
  • Using two forks, shred the pork directly in the slow cooker, discarding any excess fat. Stir to coat the pork in the sauce.
  • Toast the hamburger buns or sandwich rolls. Spoon the shredded pork onto the buns, top with coleslaw, and serve immediately.

Coleslaw Recipe

In a large bowl, mix 1/2 cup mayonnaise, 1 1/2 tablespoons apple cider vinegar, 1 tablespoon granulated sugar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add a 14-ounce package of coleslaw mix and toss to combine.

Recipe Notes

  • For extra flavor, sear the pork shoulder in a hot skillet before placing it in the slow cooker.
  • Store leftover pork in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
  • This recipe pairs well with pickles, potato salad, or baked beans for a complete meal.
