  • 1/2 cup whole milk

  • 1 teaspoon salt

  • 2 pounds russet potatoes, peeled and sliced 1/8-inch thick

  • 1 1/2 cups shredded sharp cheddar cheese, divided

  • 1/2 cup grated Parmesan cheese

  • 1 cup panko bread crumbs

  • 1 teaspoon dried parsley

Directions

  • Press BROWN/SAUTÉ on the express pressure cooker and adjust to HIGH. Add butter and heat until melted. Add onion and garlic; cook and stir for 3 to 5 minutes or until onion is softened.
  • Stir in heavy cream, whole milk, salt, and black pepper. Add potatoes and stir to coat. Secure the lid. Press MANUAL, set pressure to HIGH, and adjust time to 5 minutes. Ensure the steam release valve is in the “Seal” (closed) position. Press START/STOP.
  • Once cooking is complete, quick release the pressure. Remove the lid and gently stir in 1 cup of the shredded cheddar cheese and the Parmesan cheese.
  • Sprinkle the top with panko bread crumbs, dried parsley, and the remaining 1/2 cup cheddar cheese. Place the crisping lid on the pressure cooker. Set temperature to HIGH and time to 5 minutes. Press START/STOP.
  • Once cooking is complete, remove the crisping lid and serve immediately.
