Sambal Fried Fish Indonesian style

Sambal fried fish is another popular dish from Indonesia. If you love Nasi Padang,  you should find easily this type of dish in Padang restaurant. For people that are not a fan of chili. Do not worry, you can reduce the number of chili in the ingredients and remove the chili seeds. 

Serves: 3 - 5 people
Preparation: 15 minutes
Cook Time: 20 minutes

Give this food recipe a thumbs up if you like it ;-)

  • 2 snapper fish (wash the fish and cut into smaller pieces. Sprinkle salts on to cut pieces and leave it in the fridge for 2 hours)
  • 8 long chilies and remove the seeds. If you like a bit of spicy leave 2 - 3 chilies with seeds on them.
  • 4 shallots small size.
  • 1 clove garlic.
  • a cup of oil for frying the fish (add more if needed).
  • 3 tablespoons of oil for cooking the chili sauce.
  • 1/2 tablespoon of salt
  • 2 tablespoons of sugar.
  • 5 tablespoons of water or 30 ml of water.
Method of Cooking


  • Blender the chilies, shallots and garlic. Add some water for easy blending. Note: do not over blending, leave it on mince size. If you mortar pestle that would be even better for the taste.

Cooking Steps:

  • Heat the oil and deep fry the fish. Once cooked and golden brown, place the fish on a plate.
  • Heat the 3 tablespoon oil. Use medium heat and saute the sauce. 
  • Add some salt and keep sauteing in about 7-10 minutes until the sauce smell fragrant.
  • Add some oil if it is too dry.
  • Add 3 tablespoons of water and sugar. Keep sauteing until the water is gone. If it is too dry add some a tablespoon of oil if needed.
  • Turn off the heat and add the fish. Tossing and stirring the sauce and fish and place the dish on the plate.

You can definitely change the type of fish if you do not like snapper. One thing to remember is when sauteing the sauce do not use the oil from frying the fish as the fishy taste will be so strong left over from frying the fish. Lastly, only adding the sugar until the chili sauce is cooked and fragrant. If you add the sugar in the first minutes, it will change the color of the chili sauce to darker as they are getting caramelized. So always follow up the cooking steps.
