Sambal Tauco Fish Medan

You may wonder what is actually a tauco is? It is preserved fermented yellow soybeans which are quite famous in Chinese Indonesian and Malaysian cooking. It has a salty taste and used for flavouring stir-fried dishes. 

Serves: 3 - 4 people
Preparation: 20 minutes
Cook Time: 25 minutes

Give this food recipe a thumbs up if you like it ;-)

  • 6 shallots (slice in thin size)
  • 4 cloves of garlic (slice in thin size)
  • 5 large red chilies (slice in long thin size and remove the seed)
  • 5 large green chilies (slice in long thin size and remove the seed)
  • 3 spoon peanut or vegetable oil for cooking the ingredients.
  • 2 tablespoon fermented beans (tauco) including the taucho sauce.
  • 1 tomato diced into 4
  • a half cup of water or less.
  • 2 tablespoon sugar.
  • 1 tablespoon soya sauce (kecap asin). Add more if you need to adjust the saltiness of the sauce.
  • 2 snapper fish (cut into smaller pieces - about 8 pieces)
  • 0.5 1 inch ginger (slice in long thin size)
Method of Cooking
  • Heat the oils and fried the fish first and once brown and cooked placed in the dry towel.
  • Heat the 3 tablespoons of oil and saute the shallots, garlic, and ginger. Remember to use lower heat in here because the garlic is easy to burn and ginger can take quite a while to fry. Once they are fragrant. Add the chilies, tomatoes and two tablespoons of the tauco. Keep sauteing in about 1 - 2 minutes until fragrant.
  • Add the water, sugar, and soy sauce and keep stirring until the sauce boils.
  • Taste the sauce if need extra sugar or kecap asin, please add accordingly.
  • Lastly to put the fried fish. Do a quick toss and put it in a plate.

If you do not have kecap asin, you can replace it with salt. Kecap asin is definitely better, as it has different taste of saltiness. This type of soya sauce might be a bit hard to find because it will be only available in Indonesian store. Compare to kecap manis which is the Indonesian sweet soya sauce which is more popular and mostly available in western or Asian groceries.

Remember to follow the steps as if you twist the steps around the taste might be different. When toss the fried fish make sure you do it quick so that the fried fish is not soggy.
