Perkedel Kentang

Perkedel Kentang or known as Potato Fritter is a classic famous dish in Indonesia. It is easy to cook and you have an option to mix it up with chicken or pork meat. The recipe will be quite different to others as it will use kecap asin (salted soya sauce) to enhance the potato flavor.

Serves: 5 - 8 people
Preparation: 30 mins
Cook Time: 45 mins

Ingredients
  • 2 shallots
  • 4 garlic cloves
  • 200 gram of pork mince (replace with pork, beef or lamb mince if you like)
  • two tablespoons of kecap asin
  • 1/2 teaspoon of white pepper
  • 2 tablespoons of chopped coriander leaves
  • 1 egg for frying.
  • salt to taste
  • oil for deep frying
Method of Cooking
  • Peel off the potatoes skin and cut into smaller pieces and boil till soft. Remember to let it dry as you do not want some moist water mixed when you deep fry the potato.
  • Once soft place all the potatoes into a bowl and start crushing the potatoes till soft.
  • Chopped the garlic and shallot into smaller pieces.
  • Pour 2 tablespoons of oil and fry the garlic and shallots till fragrant. Make sure you do not burn the garlic. You can fry the shallots first.
  • Add the pork mince, kecap asin, white pepper and stir-fry the mince till fragrant. 
  • Once cooked place the mince into the mashed potato and start mixing them. Add some salt and taste it, add more salt if required.
  • Beat the egg in a bowl. Whisk the egg and add some salt.
  • Start making small flat rounded patties.
  • Prepare the hot oil in deep frying pan for frying.
  • Mix the patties with eggs and frying the fritters till golden brown.
